This is a classic recipe, and a must-do when camping with a campfire! It can be made in a cast iron dutch oven, or simply wrapped in foil, and placed on the hot coals
2 cups Self Raising flour
1 cup Milk
Mix all ingredients in a bowl until combined. Place on a floured bench or workspace and knead until well mixed. Be careful not to over-knead though, as this will make a tough and dense damper. Sprinkle with flour and place in preferred cooking implement (dutch oven or foil). Cook for approx. 30mins.
To determine if damper is cooked all the way through, knock on the outside (it should sound hollow).
If (like us!!) you pull it out and it isn’t quite cooked all the way through, cut in half, then re-wrap individually and place back in the coals for another 5-10mins, depending on how undercooked it is.
